What to do with all this milk chocolate?

I have been given a huge block of chocolate for easter. More than I can eat. I know it’s not good to use for cooking but are there any recipes using dairy milk chocolate?

No Bake Chocolate Cheesecake

1 1/2 cups Hershey’s semi-sweet chocolate chips
1 (8 ounce) package cream cheese, softened
1 (3 ounce) package cream cheese, softened
1/2 cup sugar
1/4 cup butter or margarine, softened
2 cups frozen non-dairy topping, thawed
1 (6 ounce) package graham cracker crumb crust

Place chocolate chips in small microwave-safe bowl. Microwave at HIGH (100%) 1 minute; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted when stirred. Set aside to cool.
Beat cream cheese, sugar and butter in large bowl on medium speed of mixer until creamy. Gradually add melted chips, beating on low speed until blended. Fold in whipped topping until blended; spoon into crust.
Refrigerate until firm. Garnish as desired. Cover; refrigerate leftover cheesecake

EASY CHOCOLATE CHEESECAKE

2 (4 oz. each) pkgs. Baker’s German’s sweet chocolate, divided
2 eggs
2/3 c. Karo, light or dark corn syrup
1/3 c. heavy cream
1 1/2 tsp. vanilla
2 (8 oz. each) pkgs. cream cheese, cut in cubes
Crumb crust (recipe follows)

Melt 1 1/2 packages (6 ounces) chocolate. Blend eggs, corn syrup, cream and vanilla in blender until smooth. With blender running, gradually add cream cheese; blend until smooth. Blend in chocolate. Pour into crust. Bake in 325 degree oven for 45 minutes or until set. Cool on rack. Cover; chill. Melt remaining chocolate; drizzle over top. Serves 8.
CRUMB CRUST: In 9 inch pie plate or 9 x 3 inch springform pan combine 1 3/4 cups chocolate cookie or graham cracker crumbs, 2 tablespoons sugar and 1/3 cup butter, melted, until well mixed. Press evenly in pie plate or on bottom and 1/1 4 inch up side of springform pan.

Baileys and white chocolate Cheesecake

For the base:
300g Bisuicts (Digestives or HobNobs are good)
100g Unsalted Butter, melted
Zest of 1 orange, finely grated

For the filling:
500g Mascarpone Cream Cheese
125ml Double Cream
125g Icing Sugar
200g Good quality white chocolate
50g Good quality chocolate
2 shots of Baileys

Crumble the biscuits to a fine powder, mix through the butter and orange zest, then press into the base of a metal ring, and refridgerate to set.

For the filling, melt the white chocolate, and pour onto the mascarpone. Beat the double cream to soft peaks with the icing sugar, then fold this through the mascarpone / chocolate mixture. Add the baileys. Melt the dark chocolate, and swirl this through the white choc mixture to give a marbled effect. Pour the filling onto the base, and leave to set. Dust lightly with cocoa powder to serve

Can I use chocolate truffles as chocolate chips?

I have chocolate truffles and I don’t know what to do with them. I don’t particularly like the taste of them. I was thinking of chopping them up and using them as chocolate chips. Would it ruin the recipe or would it be fine?

If they’re filled truffles, the filling might change the texture of whatever you use them to bake. Couldn’t you instead repackage them attractively and give them to someone, your doctor or mailman?
