The recipe includes a carton of double cream and if I can use milk chocolate do I not use the cream?

Ganache is just chocolate and cream. You can use any type of chocolate to make it!

when coating chocolate truffles with with cocoa powder, what percent cacao do they have to be?

Posted by admin on March 6th, 2010 and filed under chocolate truffles | 1 Comment »

Afraid that it might taste too bitter, i bought dark chocolate cocoa powder that’s used for drinking. however, i heard that when making chocolate truffles, i have to use the actual cocoa powder that’s very bitter and rich with no sugar in it. does it really matter what cocoa powder i use?

Belgian Chocolate?????

Posted by admin on March 6th, 2010 and filed under belgian chocolate | 2 Comments »

what is special about it. cause everybody i asked said it was realy good but no one would say why or they dont know

Belgian chocolate is also referred to as "Belgian couverture chocolate." Couverture chocolate contains a higher percentage of cocoa butter than regular chocolate, giving it a creamier and more subtle flavor. (It also breaks apart differently, but I have no idea why that’s important.)

Most Belgian chocolate is still made in the "Old World" ways and is held to very high standards in terms of recipe and quality, making it the finest chocolate in the world.

Melting white chocolate in the microwave?

Posted by admin on March 6th, 2010 and filed under fine chocolate | 13 Comments »

I was making a semi sweet chocolate & white chocolate bark this morning and the semi sweet chocolate melted just fine in the microwave. When I melted the white chocolate morsals the bottom chips had turned brown and crusty! Yuck! What did I do wrong?

OK first you need to microwave the chocolate in 15 second intervals stirring in between each one. When the chocolate is mostly melted with some chunks left take it out and stir. Let it set of about two minutes and stir again. By letting it sit out the heat that it has retain with melt the rest of the chocolate without burning in AKA brown and crusty. If the chocolate is old or the bag has already been open the white chocolate will not melt at all, it will become a hunk and never completely melt. Using the microwave for white chocolate is fine and when your in a hurry there is no better way, Oh and make shur that no water comes in contact with your chocolate it will ruin it.

Where can I buy a specific Powerbar in bulk? I want to eat it for breakfast everyday without going broke!?

Posted by admin on March 6th, 2010 and filed under wholesale chocolate | 2 Comments »

Here’s what I’m looking to buy in bulk. And I don’t see it at CostCo.:

Maker: PowerBar
Product Line: Harvest Whole Grain
Flavor: Peanut Butter Chocolate Chip

Any ideas on how to go to the source and buy what I want wholesale without having to pick off of the limited-selection shelves of CostCo and the like?

Usually you can only buy wholesale through wholesale clubs, or if you have a distributors license as a retailer…meaning you are buying in order to re-sell something.

If you go to the source (powerbar.com) & click the buy now, they direct you to their online vendor REI.com. They sell your bar for $1.35 ea. they offer a 20% program, which brings it down to $1.08 but is still $16.20 per box plus shipping.

If Sams club also doesn’t have your flavor, you can order it cheapest at amazon.com. It’s 15.91 per box of 15. It qualifies for free shipping if you order $25 or more.

If you subcribe to the automatic delivery option, then it’s only $13.52 per box, & shipping is free…period.

Copy & paste this link in your browser if you are interested in checking this out. It’s the best I could find & I hope it helps you!

Is there really a connection between infatuation and eating chocolates?

Posted by admin on March 6th, 2010 and filed under chocolates | 2 Comments »

they say that falling in love releases phenylethylamine(PEA)in the emotional part of our brain. PEA is known also to be found in chocolates? So is there really a connection between the two? Don’t give me that look, what do you think?
