The Chocolate War (trailer)

Adapted from Robert Cormier’s controversial novel – the most widely banned book in America – this “sardonic comedy-drama” (L.A. Herald Examiner) explores the cruelty and betrayal of adolesence. The Chocolate War is set in a Catholic boy’s school where Jerry, a new student and rebellious loner, finds himself at odds with the school’s hierarchy.

When Jerry refuses to be bullied into selling chocolates at the school’s annual fundraiser, the surly school administrator, Brother Leon teams up with Archie, the leader of Trinity prep school’s secret society the Vigils, to make Jerry’s life a living hell. But an uncompromising Jerry refuses to back down.

How do I make a jelly filling for chocolates?

Posted by admin on March 24th, 2010 and filed under chocolates | 2 Comments »

I’m looking for a good recipe for jelly filled chocolates. I’ve tried a few recipes, but none come out thick enough. I want a recipe that is thick, even somewhat chewy. Kind of like the orange slice candies. Any ideas?

This first recipe is an easy to make recipe and makes a gelee but it doesn’t actually have fruit in it. The 2nd recipe is made with fruit puree. It makes quite a lot and you might want to cut the recipe in half.

Raspberry Jelly Candy
Ingredients:
1.75 oz powdered fruit pectin
1 cup sugar
1 cup light corn syrup
3/4 cup water
1 1/2 teaspoons raspberry extract
1/4 teaspoon baking soda
red food coloring
Directions:
Warning: the first half of the recipe needs to be completed the day before you want to eat the candy.
Grease a loaf pan. Stir together pectin, water and baking soda in small pan. Cook on high heat. At the same time, bring the sugar and corn syrup to a rolling boil, stirring occasionally. When it reaches boiling, add the pectin mixture. Cook for about 1 additional minute stirring constantly. Remove from heat and add extract and food coloring, stirring to incorporate. Pour into the prepared pan and allow to cool, loosely covered, overnight on the counter. The next day invert the pan on to a platter or plate full of sugar. If you have trouble unmolding the candy, use a sharp knife to loosen it from the perimeter of the pan and carefully slide your fingers underneath the candy to gently peel the candy out of the pan. Press both sides of the candy into the sugar. Slice the candy into 1/4 inch slices, then cut each slice into 1/4 inch cubes. Roll each cube in sugar. Allow to sit an additional hour before packaging or serving. I packaged some of mine in candy bags to give as gifts and the rest is stored in Tupperware. Instead of rolling the candy in sugar you can dip it in melted chocolate.

STRAWBERRY JELLIES
1. 1 quart strained strawberry puree
2. 2 oz. strained apple juice
3. 3 T. glucose
4.1 1/4 cups sugar
5. 2 T. sugar
6. 1 tablespoon pectin powder
Combine ingredients 1, 2, 3, 4 and bring to a boil.
Combine ingredients 5 and 6 in a bowl and temper with some of the hot liquid. Whisk the tempered pectin mixture into the remaining puree. Boil for 1 minute.
Take a 9×13 cake pan and pour hot puree onto the pan and let cool. Cut the hardened jellies into 1 square inch pieces. Roll in sugar or dip in melted chocolate.
