I was making a semi sweet chocolate & white chocolate bark this morning and the semi sweet chocolate melted just fine in the microwave. When I melted the white chocolate morsals the bottom chips had turned brown and crusty! Yuck! What did I do wrong?
OK first you need to microwave the chocolate in 15 second intervals stirring in between each one. When the chocolate is mostly melted with some chunks left take it out and stir. Let it set of about two minutes and stir again. By letting it sit out the heat that it has retain with melt the rest of the chocolate without burning in AKA brown and crusty. If the chocolate is old or the bag has already been open the white chocolate will not melt at all, it will become a hunk and never completely melt. Using the microwave for white chocolate is fine and when your in a hurry there is no better way, Oh and make shur that no water comes in contact with your chocolate it will ruin it.

That chocolate seized on you, add just a little whole milk, not lowfat, not skim, not 2% , whole milk over a very low heat and bring the temp back up to a minimum of 90 degrees. 90 degrees? my thermometer doesn’t go that low, stick you finger in it and if you feel a little heat you’ve made it to at least 98.6

what gov’t regulations are there for a chocolate/candy store owner? I want to open a chocolate/candy store.
We will be having bulk candy, dipped apples in chocolate, caramel, etc. Also, cotton candy, cookies, fudge, dipped strawberries and bananas as well as frozen drinks (non-alcoholic). We will also be carrying an assortment of fine chocolates. I’m not sure what regulations I have to adhere to and am looking for some answers. Thank you.
Depends on many factors. I’m assuming you are in the United States.
If you have employees you must have a federal Employer identification. If you the business is incorporated you need to file incorporation papers with the state. (Something applies in most jurisdictions in the business is a partnership.)
If you are not using your own name you need an assumed name certificate (Issued by the county in Texas, other states may vary)
In most states we will probably need to collect sales tax and need a state tax number.
You may need workers’ compensation insurance.
Health permit.
Building occupancy permit.

Does anyone else have a problem with giving babies chocolate?
I seem to cringe at the sight or sound of a toddler, baby, or young child being rewarded or just given choclate to eat. Why are we starting our kids out so young eating badwhen they would be fine without knowing chocolate is at this age.
Tammy – I have two babies 1 & 2 and I work very hard to feed them right.
I am with you all the way. Children that young are forming their eating habits and do not need the chocoalte and junk food at all in their diet. It messes up their diets and makes them very picky eaters when older. Chocolate has no nutritional value anyway-my 3 boys had treats that were healthy-banana chips-craisins-healthy things that help them form their tastes when older.

if they mix in equal amount.
There will be no problem as long as you have a cake pan, or pans, large enough to hold that much batter. Remember to combine the liquids and fats from both instructions.
