    Just from watching the first minute, I wouldn’t consider this an expert video. Many chocolates labeled “dark” aren’t even more than 38% cacao, which is sweeter than most milk chocolate. Go with good brands, instead of choosing milk or dark based on the title. Hersheys is always going to be terrible!

    If you want good chocolate, read the ingredients. You want cocoa or cacao of any sort, sugar, soy(a) lecathin, and maybe vanilla beans. No vanillin, no corn ingredients, nothing like that.

    Valhrona is one of my favorites too. I also like using Amedei when I can find it. Belcolade and Guittard are good choices and aren’t that expensive.

    Thank you…I agree that it is worth spending a little more on good quality chocolate. My favorite for cooking is Valhrona from France and Trader Joe’s has the best prices! Guittard is also good.
