That chocolate seized on you, add just a little whole milk, not lowfat, not skim, not 2% , whole milk over a very low heat and bring the temp back up to a minimum of 90 degrees. 90 degrees? my thermometer doesn’t go that low, stick you finger in it and if you feel a little heat you’ve made it to at least 98.6

you either over heated your chocolate or got moisture in it.

if its gritty you have overheated it………and there isnt much you can do…….try adding some parrifein its clear wax and it makes the shine come to chocolate. You dont need much to bring it back and you will be amazed how it makes the chocolate last at room temp!

if you use a double boiler (pan of water with a pan of chocolate on top) on a low heat setting it will turn out right. But do not let the steam come out. if you have already turned it into a paste add a tablespoon of milk, nut the taste will change.

Well it sounds like it was over heated, you might try (if it is not burnt) adding some vanilla after it cools a little and stirring then microwave at small intervals (15 seconds at a time)stirring inbetween. If that doesn’t work it was over heated and you need to start over. Next time, try using a double boiler or microwaving it for small 15 second intervals stirring inbetween. Also, water is bad for melting chocolate so you want to make sure the bowl is completely dry. Happy dipping!

Just get some chocolate or white chocolate bark. Melt it in a glass bowl in the microwave (1 minute at a time) or melt in a double boiler on the stove top. Dip pretzels and dry on wax paper!
